Ingredients:

  • 4-6 slices Capital Thick Cut Bacon
  • 1 pound ground beef (80/20 or 85/15)
  • 4 tablespoons minced onion
  • 4 slices American cheese
  • 4 brioche hamburger buns
  • Toppings of your choice (pickles, lettuce, tomato, onion, avocado, etc.)

Burger sauce ingredients:

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup yellow mustard
  • 1 teaspoon Worcestershire sauce

Prep time: 15 minutes
Cook time: 15 minutes

1. Divide the ground beef into equal portions, about 4 ounces each. Shape each portion into a loosely packed ball.

2. Heat a large skillet or griddle over high heat until it’s smoking hot.

3. Place a ball of beef on the skillet and use a metal spatula or burger press to smash it down until it’s about 1/4-inch thick.

4. Sprinkle 1 tablespoon of minced onion on top of each patty.

5. Cook the patties for about 1-2 minutes, until a deep brown crust forms on the bottom.

6. Scrape, then flip the patties over and immediately place a slice of cheese on top of each patty.

7. Cook for an additional 1-2 minutes, until the cheese is melted and the burgers are cooked to your desired level of doneness.

8. While the burgers are cooking, place the bacon in a separate skillet and cook until crispy. Remove the bacon and place it on a paper towel to drain, reserving the bacon fat in the skillet.

9. Use the bacon fat to toast the hamburger buns until golden brown and crispy.

10. To make the burger sauce, mix together the mayonnaise, ketchup, mustard, Worcestershire sauce in a small bowl.

11. Assemble the burgers by placing a patty on the bottom bun, adding a dollop of burger sauce, a few slices of crispy bacon, and any other desired toppings and condiments. Add the top bun.
