Ingredients:

  • 1-pound (450g) potatoes, washed and peeled
  • 250g Capital Beer Sausage, sliced.
  • 1/2 cup mayonnaise 2 tablespoons Dijon mustard
  • 2 tablespoons white wine vinegar 1 teaspoon sugar
  • 1/2 cup celery, chopped.
  • 1/2 cup green onion, chopped.
  • 4 hard-boiled eggs, chopped.
  • 2 tablespoons fresh dill, chopped.
  • 1/3 lemon, juiced.
  • Salt and pepper to taste.

Prep time: 20 minutes
Cook time: 15 minutes

Prepare the ingredients:

  1. Cut the potatoes into bite-sized pieces and place them in a large pot. Cover with water and add a generous pinch of salt. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool.
  2. In a large bowl, whisk together the mayonnaise, Dijon mustard, white wine vinegar, sugar, and lemon juice. Season with salt and pepper to taste.
  3. Add the cooled potatoes, sliced Capital Beer Sausage, celery, green onion, and chopped hard-boiled eggs to the bowl with the dressing. Toss everything together until well coated.
  4. Sprinkle the chopped fresh dill over the top of the salad and give it one final toss.
  5. Chill the potato salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  6. Before serving, taste and adjust seasoning as needed. Garnish with additional fresh dill if desired.
