Ingredients:

  • Capital Ham Sausage
  • Rapini (Broccoli Rabe)
  • Garlic
  • Shallot
  • Tomato
  • Red Wine
  • Red Wine Vinegar
  • Olive Oil
  • Salt
  • Pepper
  1. Bring a pot of lightly salted water to a boil, and steam some washed Rapini using a vented steamer attachment or a pasta strainer with a lid on top. The goal is to steam the Rapini until it is tender crisp, and the stems are slightly resistant yet breakable by your fingers.
  2. In a pan with olive oil, lightly sauté some chopped garlic and shallot.
  3. When the vegetables are fragrant, add some sliced Capital Ham Sausage and lightly brown the slices over medium heat. Once browned, add two tablespoons of red wine to the pan.
  4. Once the Red wine has slightly thickened and coated the meat, set aside on a serving plate.
  5. Garnish the plate with the steamed Rapini, and sliced Tomato. Lightly drizzle some Olive Oil and Red Wine Vinegar over the vegetables to taste. Season with Salt & Pepper.
