Ingredients

  • 4 Capital Italian Sausage Links, Casings Removed

  • 1 medium Onion, Diced

  • 2 stalks Celery, Diced

  • 2 Carrots, Diced

  • 4 cloves Cloves Garlic, Chopped

  • 1/2 cup Fresh Parsley, Chopped

  • 1 can San Marzano Tomatoes, Chopped

  • 8 cup Beef Broth (No Salt Added)

  • Salt, To Taste

  • 1 tsp Dried Oregano

  • 1 tsp Garlic Powder

  • 1/2 tsp Crushed Red Chili Flakes

  • 1 can Cannellini Beans, Rinsed And Drained

  • 1 package Dried Tortellini

  • 4 Cups Chopped Spinach

  • Grated Parmesan Cheese, For Serving

Directions

  • In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Break it up into smaller pieces as it cooks.
  • Add the diced onions, celery, and carrots to the pot with the sausage. Cook for a few minutes until the vegetables release their moisture and the browned bits on the bottom of the pan are scraped up.
  • Stir everything together and let it sit to develop a crust on the bottom. Scrape off the crust and stir again. Repeat this process a few times to enhance the flavour.
  • Add the chopped parsley stems and garlic to the pot. Cook for 5-6 minutes, stirring occasionally.
  • Pour in the beef broth and add the chopped tomatoes. Add dried oregano, garlic powder, and crushed red chili flakes. Stir to combine.
  • Reduce the heat to low and cover the pot with a slightly cracked lid. Simmer for as long as you can, anywhere from 30 minutes to several hours, to develop the flavours.
  • After simmering, taste the soup and season with salt according to your preference. Add the rinsed and drained cannellini beans to the pot. Let them cook for about 4 minutes.
  • Cook the dried tortellini in the soup according to the package instructions. Add the baby spinach at the same time to wilt.
  • Serve the Italian Sausage Tortellini Soup hot, garnished with grated Parmesan cheese.
