Ingredients:

  • Rotini Pasta (freshly cooked or leftover)
  • Mariano’s Italian Sausage
  • Tomato sauce
  • White wine (optional)
  • Peas (or any veggies)
  • Olive oil
  • Parmigiano reggiano cheese
  • Mozzarella cheese
  1. Remove the casing from 2-3 links of Mariano’s Italian Sausage. Brown them in a pan with a tablespoon of olive oil until they are cooked ¾ of the way. Slice the sausage and set it aside.
  2. Steam frozen peas with boiling water and a pinch of salt.
  3. In a pot or saucepan, combine some premade tomato pasta sauce with a splash of white wine, peas, and Italian sausage. Heat everything through.
  4. Add a package worth of half-cooked, short pasta (like rotini or penne) to the pot of sauce, and mix everything together so the pasta is well coated.
  5. Transfer to a baking dish and top with mozzarella, and Parmigiano Reggiano cheese. Cover in foil, and cook at 375°F for 10-15 minutes. (reduce the time to 5-10 minutes if using leftover pasta).
  6. Remove the foil and broil until golden if desired. If the pasta seems dry, add a splash of broth to provide extra moisture.
  7. Let stand, serve, and enjoy!
