Ham Sausage & Mashed Potato Casserole

Add some Capital Ham Sausage to your leftover mashed potatoes, and breathe new life into your food!

Ingredients

  • 3 tsp Cooking Oil
  • 1 ring Capital Ham Sausage chopped
  • 1 tbsp butter
  • 0.5 Large Onion chopped
  • 3 cloves Garlic minced
  • 3 cups Leftover Mashed Potatoes
  • 0.5 cup Corn Flakes crushed
  • 1 cup Mozzarella Cheese shredded
  • 1 cup Double Cheddar Cheese shredded

Instructions

  1. Preheat an oven safe skillet, and add 2 tsp of cooking oil. When the oil begins to smoke, add the chopped Capital Ham Sausage, and cook until browned.

  2. Set the cooked Capital Ham Sausage aside, and add 1 tsp of cooking oil to the pan. This will help prevent the butter from browning. Add the butter and onions, and cook until translucent. This step will also deglaze the pan.

  3. Add the minced garlic, and cook until fragrant. Add the Capital Ham sausage back in to the skillet, and mix with the onions and garlic over medium heat.

  4. Add your leftover mashed potatoes to the skillet, and mix well. Smooth out the surface so it becomes flat. Top with crushed corn flakes (more for a crunchier top), and the two cheeses. Spread as evenly as possible.

  5. Place the skillet in the oven, and cook at 400°F until the potatoes are heated through, and the cheese is golden. This is easier if the mashed potatoes are not cold.

  6. Serve, and enjoy!
